Only the olives in perfect condition are harvested, always at night, at the end of October, transported  in boxes, maintaining low temperatures throughout the process and quickly milled with cold extraction technique. The extra virgin olive oil or EVOO differs from the refined by the lack of chemical processes; thus, it has no flaws and its organoleptic properties (colour, aroma and flavour) are unaltered.

As ecologist and committed to the environment we consider the advantages of night harvest:

Energy saving: We are bless with sunny weather and warm temperatures but…during the early picking of olives in Seville  that means ttah the temperature reaches and exceeds 30°C  during the day. but 20º or less in the night. That is an energy saving when the olives reach low temperature 18 -20 degrees to the mill avoiding industrial methods of cooling during milling. According to European law,  ‘’ cold pressed’’ needs to be produced under 27º degrees. We get it in a natural way.

Quality improvement: the lower temperatures that occur during the night appear to have a particular and positive impact on the organoleptic characteristics of the extra virgin olive oil produced. In addition, the use of small boxes improves the quality in the transport of the fruits towards the mill.

As a result, Our EVOO is extraordinary rich in polyphenols and biophenols, very beneficial for health.

Cortijo el Puerto continues to focus on building healthy soil and organic food of high nutritional value: oil, almonds, etc. and in addition to achieve low environmental impact. We look to the cosmos before planting and harvesting crops. Thus, Cortijo el Puerto itself produce its own fertility – meaning compost and nutrients –mainly through the integration of livestock and the rotation of crops. All this, we consider is noticeable in our olives’ taste.

To preserve EVOO we recommend an airtight container, in a cool place and away from the light. This will ensure its properties for up to two years.
