Only the olives in perfect condition are harvested, always at night, at the end of October, transported\u00a0 in boxes, maintaining low temperatures throughout the process and quickly milled with cold extraction technique. The extra virgin olive oil or EVOO differs from the refined by the lack of chemical processes; thus, it has no flaws and its organoleptic properties (colour, aroma and flavour) are unaltered.<\/span><\/p>\n

As ecologist and committed to the environment we consider the advantages of night harvest: <\/span><\/p>\n

That is an energy saving when the olives reach low temperature 18 -20 degrees to the mill avoiding industrial methods of cooling during milling. According to European law,\u00a0 \u2018\u2019 cold pressed\u2019\u2019 needs to be produced under 27\u00ba degrees. We get it in a natural way.<\/span><\/p>\n

Quality improvement:<\/strong> the lower temperatures that occur during the night appear to have a particular and positive impact on the organoleptic characteristics of the extra virgin olive oil produced. In addition, the use of small boxes improves the quality in the transport of the fruits towards the mill. <\/span><\/p>\n
