Bioclimatic Architecture
Our olive oil mill is designed to respect and coexist with its surroundings.
It is a building constructed with sustainable and local materials, which maintains a constant temperature with minimal energy consumption. It passively utilizes sunlight and natural ventilation, minimizing electricity consumption. Integrated home automation transforms the olive oil mill into a smart building, where architecture plays an active role in the ecological process. A space where the environment and technology work in harmony to serve the olive oil.

Industry 4.0
Cutting-edge technology applied to olive oil and sustainability. Automation using sensors and actuators, along with digital process management, allows for maximum precision and traceability. We also have a mini experimental oil mill dedicated to R&D, where we develop unique oils and new solutions for the sector. A real example of how a small rural SME can lead the way in technological innovation.

Circular Bioeconomy
At Cortijo el Puerto, nothing is wasted. We utilize all the olive tree byproducts: the pits are separated and sold to energy companies, as it is the first olive mill to eliminate the boiler, thus eliminating CO2 emissions. The alperujo (a type of olive oil) is mixed with our sheep manure and converted into organic fertilizer. We capture and store rainwater for use in irrigation and industrial processes. Our entire model promotes regenerative agriculture based on efficiency, natural recycling, and respect for the ecosystem’s life cycles.

Renewable Energy: Geothermal and Photovoltaic
The olive mill operates with a 100% renewable energy system. It is the first in Spain to incorporate geothermal energy as a source of heating and cooling: a clean, silent, and emission-free energy. This system is complemented by photovoltaic solar panels, achieving total energy efficiency. We obtain heat from the earth’s interior and electricity from the sun, applying real and sustainable solutions to the agri-food industry.

Oleotourism The oil mill is also a place for a sensory and educational experience. We offer guided tours of the farm, the building, and the factory, where we explain our philosophy and demonstrate the entire process from tree to bottle. We provide training in sustainability, biodiversity, and organic production. We conclude with a tasting of our organic and biodynamic oils, guided by experts, to learn how to identify unique aromas, flavors, and nuances. An environment where learning and enjoyment go hand in hand.
