Mediterranean Diet is based on the region’s traditional fruits, vegetables, beans, nuts, seafood, dairy and olive oil. It is also a nutritional model so universally appreciated that belongs to the cultural, historical, social, territorial and environmental lifestyle of us, the Mediterranean people.

In Cortijo el Puerto we cultivate 100% organic 11 different varieties, with maximum care and environmental respect and we consider it is noticeable to the flavour of the olives and the juice of these. Each oil has got a personality, smell and special flavour, organoleptic characteristics that allow multiple and different pairings. Arbequina, sweet and balanced, excellent pairing with nut breads, fruit salads or mushrooms.
Tip of July: this month we have plenty of seasonal fruits: cherries, pears, apricots, peaches, mango … use them in your fruit salad with a splash of EVOO!
Arbosana, with a clean aroma of green grass, perfect match with cold dishes, vinaigrettes and seafood.
Tip of July: now, in the ideal season to marry it with canons, green beans or beans! or also with a tomato, onion and prawns! Rich and refreshing
Picual, slightly bitter a pleasant pungency in throat, ideal in stews, sauteed, fried or scrambled eggs and rice dishes. In July, aubergines and zucchini are ready for a good “pisto”, take advantage of them and give a touch of quality and flavour with Picual Cortijo el Puerto!
Hojiblanca, herbaceous notes, in the mouth it is sweet, with a light bitterness ending with a strong peppery kick and excellent vegetable flavour. Is a very versatile EVOO for different culinary techniques and pairings: gazpachos, ajoblanco, poached eggs, stewed vegetables, meats, stews and fish. Also in pastry and desserts for its excellent combination.
Tip of July: try gazpacho and enjoy the Summer!… 3 tomatoes, 1 pepper, 1/2 cucumber, 1/2 onion, 1 or 2 garlic clove, vinegar and add two heaping tablespoons of the best oil for the final touch!. Use the mixer for 2 minutes and you’ll get a finer blend of vegetables.
Picudo, Floral, delicate and clean scent. Very balanced, complex and persistent, it is one of my favorites, exquisite with traditional breads, panettone and pastries. Cold dishes, emulsions, homemade tomato sauces, carpaccios, mushrooms (Boletus Edulis, Amanita Caesarea) and white fish.
Tip of July: Exquisite simply with bread, to start the day well and also with mushrooms and a pinch of garlic and pine nuts …
Chiquitita, also fruity, with a cinnamon and fennel background, combines with citrus, honey, nuts and chocolate. Ideal in raw, vinaigrettes and emulsions (alliolli, mayonnaise). Salads of green leaves and with fish and seafood. Tip of July: An allioli of Chiquitita with fish and seafood …it will have you licking your fingers!
Koroneiki, fruity with reminiscences of artichoke and green plantain, paired with salads like the classic Greek salad. Special with aubergines, zucchini, roasted vegetables. Also with cheeses, eggs, and soft emulsions (Greek yogurt, mayonnaise). Tip of July: Koroneiki with goat cheese and ruccola, put some nuts and give it a great touch. Cornicabra, Complex profile, highlighting the deep green-olive fruity aroma but with a great diversity of secondary aromas like apple and almond. Pairing: special breads (aromatic with honey, nuts, blueberries or seeds). Recommended in dressings, pickles, sauces, stews and meats. Special with potatoes in garnish, Pulpo a la gallega (octopus). Also with raw fish, sashimi or tataki.
Tip of July: land and sea: from the land, a stew of rice with chicken on the Cornicabra. From the sea, “Pulpo a la gallega” Galician style octopus: octopus, potatoes, spicy paprika from “la Vera” and the final touch, adding the Cornicabra olive oil. delicious!
Manzanilla Cacereña, a fruity EVOO of green olives. In the mouth it is sweet, with a light bitterness ending with a strong and located peppery kick and excellent vegetable touch. Pairing: Breakfasts and snacks with traditional breads (Alfacar, Candeal, Galician bread) and speciality breads (aromatic, rye, ciabatta roll…). Perfect for ajoblanco, stews and seafood.
Tip of July: Cacereña…lovely pairing with raw red cabbage or roasted peppers … to open your mouth!
Oliana, Herbaceous scent, green leaf, banana, green tomato, green almond (alloza) and a citric touch. Ideal in dressings, salads of green leaves or fruit, cooked vegetables and white fish. Also in desserts, sweets and ice cream. Tip of July: The soft Oliana is perfect after a day of excess … with white fish like hake, delicious and digestive for a dinner. Accompany it with pineapple and give it a tropical touch.
Royeta: The oil of this season is fruity of green olives, with a banana and green grass background. Tip of July: enriching sandwiches, my favorite: salmon and lamb’s lettuce with fresh cheese and Royeta. Or with Mango, for dessert …
